This recipe is phenomenal for three simple reasons. First, using any (very) ripe bananas on your counter is a great recipe. Usually, those would go to waste, but with this recipe, you can quickly turn them into something sweet and delicious. Second, this recipe takes less than half an hour to make, so it’s perfect for anyone who adores a homemade cookie but is busy during the week or on weekends. And third, they are perfect. The balance between banana, sugar, and chocolate chip is spot on, and we adore it.

Essential ingredients

Bananas - use ripe bananas for their natural sweetness and flavor. If you don't have them at home, feel free to plate the (unpeeled) bananas on a baking sheet and place them in the oven for a couple of minutes for them to brown. Then peel them and use them.

Flour - use all-purpose flour for this recipe.

Baking powder and baking soda will help the cookies to rise. 

Sugar - we prefer using white sugar. In this recipe, we use a small amount of sugar, as the bananas already give them sweetness.

Butter - makes the cookies buttery and delicious. Use room-temperature butter. Take it from the fridge about 30 minutes before baking.

Eggs - use two eggs in size M to bring the batter together.

Chocolate—Use your favorite chocolate chips. We prefer semi-sweet chocolate chips, but chocolate chunks will do the job, too.

METHOD

  • Mash the bananas and stir the flour

    Peel the bananas and place them onto a working surface. Using a fork, mash them into a puree. In a bowl, combine flour, a pinch of salt, baking powder, and baking soda.

    Add room-temperature butter and sugar to a large bowl. Using an electric mixer, beat the ingredients to get a smooth mixture. Add the eggs and beat into a foamy mixture. Add the mashed bananas and flour mixture and beat to a smooth mixture. Stir in almost all of the chocolate chips using a spatula. Save some chocolate chips for later.

  • prepare the oven

    Set a rack in the middle of the oven and preheat it to 200 °C / 390 °F. Line a large baking sheet with parchment paper.

  • bake

    Using a small ice cream spoon, scoop some cookie batter and place it on the prepared baking sheet. Make sure there's enough space between the cooking. Arrange the rest of the chocolate chips on top. Place in the oven and bake for 12 minutes at 200 °C / 390 °F or until beautiful and golden on the edges.
